Back from Cruise and then M.I.A.

Before I left, my desktop was having some issues with starting up.  I figured when I got home and it having the week off it would be all better and start right up for me.

Well, after 7 days it was still pretty darn sick and would have to see a specialist to fix it.

Thank goodness I have a brother in law who knows how to treat sick computers.  I took it straight to him the day I returned and just now have gotten it back.

I was SO lost all week without my computer.  I tried to get into my blog from my son's laptop, but of course I had forgotten my password and when I tried to rest it, I couldn't because I did know the password to my email account it was to be sent to.  I always hit that little button that says "remember me" and I never write it down.  I figure that I'll remember it and writing it down won't be necessary.

Apparently, now that I'm 41, it seems it is necessary to write them down and make them something I can remember as well or at least *try* to remember.

Anyway, I'm back and had a great cruise.  Seas were good to us and no one in my group was sick.  Now the cruise before, I heard those passengers never left their cabins because they were so sick.

So for the next five days, this is where I'll be.  You can find me lounging on the pool deck with a nice cold drink in one hand and a good book in the other. 

My Mother is taking myself and two of my boys as well as my sister and two of her girls on this lovely trip.  The kids are SO super excited and I'm sure we will all have a blast.  The others get to stay home and take care of the animals and get ready to leave on a hunt trip when we get back.  We take turns with vacations. 

I'm sure the kids will be in the Camp Carnival area or they will be found on the water slide.  Not me!  I'll be watching from the side and cheering them on.

We live in Florida, so these great deals come and if your smart to catch them and fast enough to book them you can get a really sweet deal like we did.  Seven people for less then $2400.00 on a 5 night cruise....that's less then $70.00 per day and that includes tips AND port charges.  Gotta love a deal!!!

Happy 50th Wedding Anniversary!!

Happy 50th Wedding Anniversary!!


In today's world to make it to 50 years is a true blessing from God and a commitment from two people here on Earth to one another.  In this case, my husbands parents have been married 50 years!

We had the best time celebrating up at the Jackson Hole.  That's the name of our hunt camp and it was the perfect place to do it.  The beautiful outdoors and all the family together with a BUNCH of kids.

This was just our gang as well as his sisters gang.  We had about 22 others off to the side waiting to get back to playing.

 The favorite thing to do before dinner, tractor rides.  By the way, the Georgia chair is NOT ours!!!


 This is my sons hunt stand.  It also works as our fire tower when brush fires are near and we need to see which way the fire is coming.

Parmesan Encrusted Chicken

So, I was a bit bored on Thursday night and I needed something to make with C.H.I.C.K.E.N.  We have been through all the meat cycles and have had breakfast for dinner twice in the last 10 days.

Now, I'm back to chicken again and I began to play in the kitchen.  It was fun and the meal scored a Perfect 10  from my boys and MacGyver.


Ingredients:
4 chicken breasts
1 cup plain bread crumbs
1 cup Parmesan cheese
1 cup evaporated milk
1/2 cup mustard
Preheat oven to 475
Bake for 15-18 minutes

Combine evaporated milk and mustard in bowl and stir together.  (Next time, I think I'll blend in the Magic Bullet to make it a bit more creamy.)

In a bowl that is not to deep or shallow, combine bread crumbs and Parmesan cheese and mix until blended together.

I cut the chicken breast in half lengthwise and then placed in the evaporated milk and mustard mixture for a quick second.  You don't want it too wet.

Then place the chicken breast into the bread crumbs and Parmesan cheese mixture and coat really well on both sides, then place in 13x9 baking dish.  Make sure you spray the baking dish with non-stick cooking spray.

Place into preheated oven at 475 for 15-18 minutes until the outside is golden brown or the insides are no longer pink.  If using tongs handle with care as they can and will scape the Parmesan off the chicken.

The chicken stays moist and juicy while the outside gets nice and crisp.
