Mini Pumpkin Pies


As I posted a few weeks ago, I am back on a mission to loose 40 additional pounds by January 14, 2012.  I  love sweets and I normally have to cook gluten free for one of my boys. While surfing the World Wide Web, I came across a blog called Dashing Dish, Healthy Alternative to the Food You Crave.  Katie Farrell is the blog author and she does an amazing job creating dishes to keep meals healthy and satisfying. Recently, with fall in the air, Katie has been on a pumpkin fest.   She has created Pumpkin Spice Protein Pancakes, and also a Pumpkin Pie Milkshake. She also has a Pumpkin Trifle and Pumpkin Cinnamon Rolls.

But the best by far are the Mini Pumpkin Pies.  Oh My Goodness!!  These little mini pumpkin pies are so delicious and are low in calories IF you follow the recipes exactly as instructed.  These little things are only 36 calories each.  Can you say, Oh yeah!!

Ingredients Needed:
1/2 cup Pumpkin
1/2 cup Egg Whites
1 tsp Pumpkin Spice
1 Cup Sweetener of Choice
1 Cup Cottage Cheese
12 Won Ton Wrappers

Spray pan with cooking spray and preheat oven to 350 and bake for 12-15 minutes.


Mix all ingredients together in blender except won tons wrappers.  I tried using a hand mixer and it just doesn't dissolve the cottage cheese very well. 

After searching for my blender that doesn't seem to not exist anymore, I had to resort to my Bullet. It did the trick and blended everything so creamy and yummy smelling. ( I found out later, the boys had used it this summer and burnt up the motor. With four boys, anything is possible.)

Spray pan and place one won ton wrapper in each place.

Pour mixture into won ton wrapper being careful not to overflow them. Place in oven for 12-15 minutes at 350 degrees.  Be careful removing or.....

DO NOT DO THIS...YOU WILL CRY!!   I was taking these out with one hand and my 13 year old says, "Use two hands Mom." Just as he said that, down they went.  I just stood there...speechless.

Fortunately, I had made three muffins tins of these little yummy Pumpkin Pies.  12 are gone already, 12 were dropped.  I have 12 for the weekend.

This would be a great treat for any holiday party.

  1. Found you on Comfy In The Kitchen's Linky Party! These sound delicious! I just bought two cans of pumpkin today "just incase" I found another great recipe... may have to try these! And thanks for being real - I'v dropped a dozen cookies on the floor, right out of the oven before too. No fun.

  3. Oh my gosh! Sorry, but I am cracking up-this is so typical at my house. We had guests over for a cook-out, and I dropped a whole pan of freshly grilled hamburgers on the ground. Right in front of everyone. Oh, and leave it to a child to "remind" us to use both hands. Another reason to practice what we preach-LOL. Love your blog-thanks for visiting mine!

    p.s. just before reading your post, I set my oven on the cleaning cycle, due to some of my kitchen mis-haps. :)

  6. The original recipe calls for Stevia and that's what I used as well. Enjoy.
